    St David’s Cardiff appoints new Executive Chef

    The five-star voco® St. David’s Cardiff today announced the appointment of their new Executive Chef David Woodford and the launch of their brand-new menu at the waterside Admiral St David restaurant.

    Having worked in numerous hospitality positions across the world, David Woodford brings a wealth of culinary experience to Cardiff with a heavy focus on a refined and personalised guest experience. As Executive Chef, David Woodford will oversee the hotel’s entire culinary operation including The Admiral St David restaurant and event catering.

    Since joining voco St. David’s Cardiff, David has introduced new menus throughout the hotel, focused on locally sourced ingredients and fresh produce with a vibrant selection of new flavours. He has ensured that the full menu continues to offer the finest ingredients from local suppliers from the fabulous larder Wales has to offer.

    Main course highlights include treacle-cured beef featherblade with cheddar mashed potatoes, mushroom ketchup and kale; pan-fried sea bass with Jerusalem artichoke purée and crisps; and kabocha pumpkin massaman curry with jasmine rice.

    Starters feature torched mackerel with pickled kohlrabi salad, and grilled baby artichokes with roasted turnips and shallots. Whilst the dessert menu boasts dishes such as plum and tarragon fool, and banana and walnut cake with toffee sauce and espresso cream.

    David said: “I feel very privileged to be working at voco® St. David’s Cardiff which has such an abundance of great Welsh spirit. Our meals are presented with meticulous attention to detail, and we are using a range of advanced culinary processes to ensure that the visual element of our food matches the taste.”
