As autumn settles across the Welsh countryside, The Celtic Manor Resort is bringing the season to life with a limited-time dining experience that’s unlike anything else.
Lauched this week and available until Saturday 11th October 2025, Rafters Restaurant has been transformed for WILD at Rafters, an immersive forest-inspired menu rooted in nature.

Perched high above the Twenty Ten golf course, Rafters is already one of the resort’s most striking settings, with vaulted beams and sweeping views across the parkland. For this event, it takes on an even more atmospheric feel, with natural textures, seasonal displays and a warm woodland theme that perfectly matches the menu.

If you haven’t been before, Rafters is tucked away beyond the main resort, giving it a more exclusive feel. There’s parking on site, or the resort offers transfers if you’re staying overnight.
A menu that celebrates the season
Executive Head Chef Michael Bates has created a menu that shines a spotlight on seasonal, locally sourced produce. Every dish reflects the flavours of autumn, with inspiration drawn from the forest, field and coast.

For starters, highlights include Severn & Wye Smoked Salmon with horseradish cream, pickled apple and seaweed, or Cured Venison Carpaccio with parsnip, beetroot and cobnut brittle.

If you want something a little different, the Pan Seared Partridge Breast with girolle mushrooms and Madeira jus is worth considering, while the Pumpkin & Truffle Velouté is a lighter but warming choice.

For mains, the British Venison Loin with smoked mash, juniper and elderberry jus is a real showstopper – full of depth and flavour.

Another stand-out is the Mallard Duck Breast with confit leg, glazed fig and roasted beetroot, which brings together game, sweetness and earthiness in one balanced plate.

Desserts continue the woodland theme, with a Hedgerow Crumble paired with woodruff ice cream, or a comforting Bara Brith Bread Pudding served with honey ice cream and walnuts. The use of honey from Celtic Manor’s own hives is a thoughtful local touch.
