    Nomad to take over former Terra Mare site in Cardiff

    Nomad is set to open its doors in Cardiff city centre on Friday 27 June, taking over the former Terra Mare site at 28 High Street in the Castle Quarter.

    Whether you’re dropping in for a cocktail and a snack, sharing hand-rolled pasta and flatbreads with friends, the space is designed to flow with the rhythm of the guest.

    The monthly-changing menu brings together seasonal small plates, hand-rolled pasta and signature flatbreads all led by flavour, not formality. Dishes include white and brown crab Caesar with anchovy and bottarga, dino beef short ribs with hazelnut and horseradish, and a 650g dry-aged pork chop with cider and mustard jus. Flatbreads come topped with the likes of Severn & Wye smoked salmon with horseradish, or heritage tomatoes, burrata and pistachio pesto. There are also lighter options – from Atlantic Edge oysters with Bloody Mary dressing to beetroot tartare and smoked fish pâté with pickled mussels – ideal for grazing alongside a drink.

    Lali Souto leads the kitchen, bringing experience from Matsudai Ramen, Poca and Nook, where he built a reputation for precise, flavour-driven cooking with global influence.

    Head Chef Lali Souto, said: “Nomad’s a friendly, energetic and flavour-first space – somewhere you can eat and drink as much or as little as you like. Whether you’re in for a cocktail, a bowl of pasta, or just passing through, we want people to feel welcome whatever the occasion. We’re cooking food people come back for – whether it’s simple, shareable, or something unexpected.”

    Kim Barritt, formerly of Penny & Thomas, leads the floor and beverage programme, overseeing the service and drinks list. Expect signature cocktails, quality wines by the glass and draught beer, with the bar remaining a key feature – offering a relaxed spot to sit, sip and snack without booking in for a full meal.

    The design brings a fresh look to the site – what the team call a “lux-modern canteen” feel. The layout has been created with solo diners, couples and large groups in mind, making it a versatile spot for any occasion.

    First service is on Friday 27 June, with an exclusive launch offer of 25% off entire bill for the first two weeks.
