    Palé Hall crowned Wales Best Hotel Restaurant 2022

    The Henry Robertson Dining Room at Palé Hall in north Wales has been crowned Wales’ best hotel restaurant 2022 at the World Culinary Awards, held in Dubai on Tuesday 13th December. The annual awards celebrate and reward excellence in the culinary industry and votes are cast by a mix of industry professionals and the public.

    This year’s World Culinary Awards saw a global gathering of pioneers, influencers and leading figureheads from across the world attending the prize-giving evening at Onze Restaurant, Dubai Creek Golf & Yacht Club.

    The Henry Robertson Dining Room holds 3 AA Rosettes and a Green Michelin Star, which it earned in 2021 and retained in 2022 for its commitment to sustainable practices, including having its own clean, completely carbon-neutral source of electricity, and offering dishes which are sourced locally wherever possible to support Welsh farmers and businesses are and to also reduce haulage and CO2 emissions.

    Head chef Gareth Stevenson’s food is inspired by the local surroundings, and he follows the seasons and speaks to local producers and suppliers to develop his dishes, which take classic British flavours with elements of Japanese culinary culture and Middle Eastern inspiration too. The 5-course or 8-course tasting menu is enhanced with an accompanying wine flight expertly chosen by their sommelier to complement each course.

    Diners at the Henry Robertson Dining room can enjoy a most grand setting, overlooking the hotel’s 50-acre estate and rolling green hills in the distance. The light and elegant dining room in this 150 year-old country house was designed to impress, with its ornate plaster ceilings and marble fireplace, crystal chandeliers, gilded mirrors and antiques to add to the character.

    General Manager Debbie Cappadona said: “We are thrilled to have been awarded this international accolade. We strive for excellence and aim to offer an exceptional culinary experience, so I am delighted that Gareth and the team have been recognised for their achievements, by both the industry professionals and by the public vote.”
